About the Recipe
I love this dressing! It’s the perfect dressing for grain-based salads. The grains soak up the dressing an enhance the salad flavour. Add leafy greens, broccoli, fennel, carrots, snap peas, Brussels sprouts, or even asparagus and you’ll have a super tasty salad.
You can use the dressing cold or gently warmed. It lasts for up to 2 weeks in the fridge.
Ingredients
1 orange
1 lemon
1 tablespoon agave syrup
1 tablespoon white wine vinegar
150ml extra virgin olive oil
1 teaspoon salt
Preparation
Zest the orange and the lemon. Add the zest to the bowl of your handheld blender.
Half the fruit and squeeze all the juice into the same bowl. Be careful to remove all the pips.
Add the agave, vinegar and salt, and blitz for a few seconds. Add a third of the olive oil and blitz for 2 seconds. Do the same for the remaining olive oil – one third at a time.
You can whisk the dressing by hand. Using the hand blender will make it creamier.
