‘Meaty’ Shiitake and Pak Choi Chow Mein

Looking for a tasty, plant-based alternative to a traditional chow mein? This speedy and super-easy stir-fry is the perfect ‘fake-away’ that the whole family will love! It’s packed with crunchy Pak Choi, sweet cashews and ‘meaty’ shiitake all tossed in a delicious chow mein sauce.

It’s ready in just 15 minutes - you’ll have dinner on the table quicker than you can order a take-out!

Ingredients

1 teaspoon ginger paste

1 garlic clove, minced

2 spring onions, finely sliced

250g Pak Choi, finely sliced

120g shiitake mushrooms, sliced

2 handfuls cashew nuts

5 tablespoons dark soy sauce

½ teaspoon Chinese five spice

1 teaspoon agave syrup

150g thread fine straight to wok noodles

2 radishes, finely sliced

Pinch of sesame seeds

Olive oil for frying

 

Preparation

Heat the olive oil in a wok. Add the ginger, garlic and spring onion. Stir fry for 1 minute to create an infused oil.

 

Add the Pak Choi and cashew nuts. Gently mix to coat in the oil and stir fry for 2 minutes.

 

Add the soy sauce, spice and agave syrup. Mix well and stir fry for another minute.

 

Gently separate the noodles and add them to the wok. Coat them well in the sauce. Cook for 2 more minutes until the noodles are hot.

 

Remove from the heat. Stir in the sliced radishes. Serve immediately with a few extra slices of radish for garnish and a sprinkle of sesame seeds on top.
